  1. Prepare the sauce: Cut the passion fruit in half and collect the pulp. I had 2 fruits of fresh passion and I added frozen pulp from Picard. 

  2. In a skillet, brown the minced shallot in a tablespoon of butter. Add the maracujá pulp (passion fruit) and sugar. Simmer 5 minutes over low heat up to slight reduction.
  3. Add the crème fraîche, mix well, and let thicken gently for an additional 5 minutes. Rectify the seasoning.
  4. Cook the medallions: in another pan, heat the rest of the butter and brown the turkey medallions for about 4 minutes on each side. Salt and pepper.
  5. Serve: Arrange the medallions on the plates, generously coat with maracujá sauce.
  6. Serve hot with white rice or sautéed green vegetables.
