When we think of cordon bleu, we immediately imagine their crispy breading and melting heart, a true classic that delights young and old. But did you know that it is entirely possible to prepare them gluten-free while retaining their irresistible flavor and texture? Prepare the escalopes: Lightly flatten the chicken fillets with a rolling pin between two sheets of baking paper. If your chicken breasts are thick, make a cut lengthwise to split them in half, but not all the way. If they are thin, you will simply fold them in half. Salt and pepper each side.

Garnish the cordon bleu: Place half a slice of ham and a slice of cheese on each chicken fillet. Gently fold the cutlet in half to enclose the filling. If necessary, secure the edges with toothpicks to prevent the cheese from escaping during cooking. If your chicken breasts are thick, place them inside.

Prepare the oatmeal breading: Lightly blend the oatmeal in a food processor to obtain a finer texture, ideal for breading. But you can leave them whole if you prefer.

Prepare three plates: one with the rice flour, another with the beaten eggs and a third with the mixed or whole oat flakes. Add paprika and garlic powder to the flakes to enhance the flavor.

Bread the cordon bleu: Dip each cordon bleu in rice flour to coat the entire surface well. Then dip it in the beaten eggs, then roll it generously in the oatmeal. Repeat this step a second time for a thicker, crispier breading.

Cook the cordon bleu: Heat a pan with a little oil over medium heat. Cook the cordon bleu for about 6 to 8 minutes on each side, until they are nicely browned and the chicken is cooked through. For lighter cooking, you can bake them in the oven at 200°C for 20 to 25 minutes, turning them halfway through cooking. As for me, I cooked them in my Ninja Foodi, in air fry mode, for 16 minutes, turning them halfway through cooking.

Serve and enjoy: Remove toothpicks before serving. Accompany your cordon bleu with mashed potatoes, fried vegetables or a green salad.
