Sõrnikud (or Syrniki are very popular in Estonia and Eastern countries. Made with Kohupiim (can be replaced with ricotta or cottage cheese), they are slightly sweet and often served with crème fraîche, jam or fresh fruit.

Sõrnikud (Estonian fresh cheese pancakes)

  1. For 8 small pancakes:
  2. Prepare the dough: In a large bowl, mix together the Kohupiim, egg, sugar, vanilla extract and a pinch of salt. Incorporate the rice flour little by little until you obtain a slightly thick paste. Add caraway seeds if desired. 

  3. Cook the Sõrnikud: Heat a little vegetable oil in a pancake pan over medium heat. Place a large tablespoon of dough and flatten it a little. Cook the Sõrnikud for about 2 to 3 minutes on each side, until golden brown and slightly crispy on the outside.
  4. Serve: Serve the Sõrnikud hot, sprinkled with icing sugar or accompanied by crème fraîche, jam, honey or fresh fruit.

Note

Fruit : Add raisins or apple pieces to the batter for added texture and flavor.

Sugar-free : You can also make a savory version of Sõrnikud by omitting the sugar and adding herbs like chives or parsley.
