Samosas are a well-known Indian delicacy, often served during festivals like Diwali , the festival of lights. They are also prepared in Réunion. Traditionally filled with vegetables or spiced meat and wrapped in crispy pastry, this gluten-free version uses rice paper to maintain its crunch while being suitable for those following a specific diet. Perfect as an appetizer or festive snack, these gluten-free samosas combine rich, spicy flavors with a light and crispy texture.

  1. To prepare the filling: Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then add the onion, garlic, ginger, and green chili (if using), and sauté until the onion is translucent. Stir in the diced potatoes, carrots, and peas. Add the ground cumin, turmeric, garam masala, salt, and pepper. Cook over medium heat for about 10 to 15 minutes, stirring regularly, until the vegetables are tender. Remove from the heat and let cool slightly.
  2. Preparing the rice paper: Soak a rice paper sheet in a bowl of warm water for about 10 to 15 seconds, until it becomes pliable. Place it on a clean, smooth surface.
  3. Shaping the samosas: Fold the rice paper in half to form a rectangle. Place a small spoonful of filling on the left side, about 3 cm from the edge. Fold the rice paper in a triangle shape starting from the left, around the filling, and continue folding in a triangle, making sure to completely enclose the filling. Repeat with the remaining rice paper and filling.
  4. Cooking: Heat a little oil in a pan over medium heat and fry the samosas for a few minutes on each side, until golden brown and crispy. You can also brush them with oil and bake them in the oven at 180°C (350°F) for about 15 minutes, turning them halfway through, or use your air fryer or Ninja Foodi for about 10 minutes.

  5. Serving suggestion: Serve the samosas warm with mint sauce or tamarind chutney for a sweet and tangy touch.

Note

I admit that I have a weakness for Réunion samosas: You can vary the filling by using minced meat (beef, pork, chicken), minced fish, cheese, adding kaffir lime, ginger and/or other vegetables of your choice.
