1- Heat the oil in a frying pan and brown the onions until golden.

2- Add the garlic, ginger, cinnamon, cloves, cardamom and bay leaf. Leave to roast 1 minute.

3- Incorporate paprika, chili, cumin, coriander and turmeric. Mix quickly.

4- Add the lamb pieces and enter them on all sides.

5- Reduce the fire, add the yogurt, stirring to prevent it from curdling.

6- Pour the water or the broth, cover and simmer 1h to 1h30 over low heat until the meat is tender.

7- Adjust the seasoning and serve hot, dotted with fresh coriander.
