Palmito salada , or palm heart salad, is a refreshing Brazilian entrance and naturally gluten -free . With its crunchy and fresh side, it is often served during summer meals and churrascos (Brazilian barbecues). Originally from Amazonian cuisine, the palm heart is a precious ingredient from the palm, will have jacked or açaí. It is accompanied here with very ripe tomatoes, red onions and a tangy lime, a typical Brazil touch. Drain and rinse the palm hearts, then cut them into rings.

In a bowl, mix the diced tomatoes, the minced onion, the avocado and the palm hearts.

Prepare the vinaigrette: emulsify the lime juice with olive oil, salt and pepper. (I use my hand blender)

Pour the vinaigrette over the salad and mix well.
