A red fruit tartlet, gluten-free and lactose-free, that I made when I lived in Chicago. I gleaned and mixed several recipe ideas and kept what I liked best. You can make Chia seed jam with different fruits: raspberries, mango, passion fruit... frozen or fresh.

  1. Prepare the dough: Mix the flours, yeast and sugar. Add the coconut oil then the beaten eggs. Bake for around fifteen minutes in an oven preheated to 180 degrees. When removed, set aside on a rack and let cool.
  2. Prepare the fruit jam: In a saucepan, heat the fruits, then blend or crush them finely. Add 2 tablespoons of honey or agave syrup and 4 tablespoons of chia seeds. Mix and bring to the boil for one minute then set aside.
  3. Add the toppings: Once the dough has cooled, spread the fruit mixture over the dough bases then refrigerate for at least 2 hours.
  4. Serve: with some red fruits and enjoy.

  6. You can personalize the jam according to your tastes or the fruits you have at home.
  7. This jam will keep for 2 weeks in the fridge, in a closed jar.
