  1. Prepare the rack of lamb:
  2. Preheat the oven to 200°C.
  3. In a frying pan, heat the olive oil over medium heat. Generously salt and pepper the rack of lamb, then sear it on all sides until nicely browned. Remove it from the pan and let cool slightly.
  4. Prepare the herb and parmesan crust:

  5. In a bowl, mix the grated parmesan, gluten-free breadcrumbs, chopped fresh herbs, and garlic.
  6. Brush the rack of lamb with Dijon mustard, making sure to coat the entire surface.
  7. Press the herb and parmesan mixture over the mustard to form an even crust. Press lightly to adhere well.
  8. Baking:

  9. Place the rack of lamb in a baking dish, crust side up.
  10. Bake for approximately 20 to 25 minutes for medium-rare cooking, or adjust the time according to your preferences (30 to 35 minutes for medium-rare cooking).
  11. Remove the square from the oven, cover it with aluminum foil, and let it rest for 5 to 10 minutes before cutting it.
