Prepare the rack of lamb:

In a frying pan, heat the olive oil over medium heat. Season the rack of lamb generously with salt and pepper, then sear it on all sides until well browned. Remove it from the pan and let it cool slightly.

Prepare the herb and parmesan crust:

In a bowl, mix together the grated Parmesan cheese, gluten-free breadcrumbs, chopped fresh herbs, and garlic.

Brush the rack of lamb with Dijon mustard, making sure to coat the entire surface.

Press the herb and parmesan mixture onto the mustard to form an even crust. Press lightly to ensure it adheres well.

Oven baking:

Place the rack of lamb in an ovenproof dish, crust side up.

Bake for approximately 20 to 25 minutes for a pink center, or adjust the time according to your preference (30 to 35 minutes for a medium center).
