  2. Prepare the fragrant syrup: In a saucepan, bring the water to the boil with the ginger slices, sugar (or honey), cinnamon stick and lemon zest.
  3. Reduce the heat and simmer for 5 minutes to release the aromas.
  4. Brew the green tea: Remove the pan from the heat and add the bags or loose tea. Let it steep for 5 minutes, then remove the bags or strain the tea leaves.
  5. Poach the pears: Return the pan to a low heat. Add the pears to the liquid and let them poach for 15 to 20 minutes, carefully turning them halfway through cooking so they cook evenly. The pears should be tender but still holding together well. Check with the tip of a knife.
  6. Serve: Carefully remove the pears and arrange them on individual plates or a serving platter. Reduce the syrup slightly if it is too liquid, then cover the pears with this fragrant mixture. Sprinkle with flaked almonds and sesame seeds.
