Prepare the gluten-free shortcrust pastry (recipe here ). Let it rest for 30 minutes in the refrigerator.

Preheat your oven to 180°C.

To prepare the filling: In a large bowl, whisk the eggs with the corn (or maple) syrup, brown sugar, melted butter, vanilla extract and a pinch of salt until well combined.

Roll out the dough between two sheets of cling film. You can make one large tart or a dozen tartlets.

Arrange the pecan nuts on the rolled-out dough and pour it into a tart pan.

Pour the liquid mixture over the pecans.

Baking: Bake the tart for 35 to 45 minutes (a little less for tartlets) or until the filling is set and lightly browned.

Allow to cool to room temperature before serving.
