  1. Prepare the gluten-free shortcrust pastry (recipe here ). Let it rest for 30 minutes in the refrigerator.

  2. Preheat your oven to 180°C.
  3. To prepare the filling: In a large bowl, whisk the eggs with the corn (or maple) syrup, brown sugar, melted butter, vanilla extract and a pinch of salt until well combined.
  4. Roll out the dough between two sheets of cling film. You can make one large tart or a dozen tartlets.
  5. Arrange the pecan nuts on the rolled-out dough and pour it into a tart pan.
  6. Pour the liquid mixture over the pecans.
  7. Baking: Bake the tart for 35 to 45 minutes (a little less for tartlets) or until the filling is set and lightly browned.
  8. Allow to cool to room temperature before serving.

Note

Serve your gluten-free pecan pie with a scoop of vanilla ice cream or a dollop of whipped cream for an even more indulgent touch.
