Prepare the stuffing: In a bowl, mix the chopped dates, crushed walnuts, 1 tablespoon of honey, orange blossom and cinnamon. Mix until you obtain a homogeneous stuffing.

Stuff the pears: Fill the cavities of the pears with the stuffing, packing lightly so that they are well stuffed.

Cooking the pears: Preheat the oven to 180°C. Brush a baking dish with butter or coconut oil. Arrange the stuffed pears in the dish, then sprinkle them with 1 tablespoon of honey diluted in a little water (about 2 tablespoons). Cover the dish with foil and bake for 25 to 30 minutes, until the pears are tender but still hold their shape.

Finishing and decoration: Remove the aluminum foil for the last 5 minutes of cooking, to lightly caramelize the pears.

Serve the pears warm or at room temperature, decorated with chopped pistachios.
