Preparation of the pears: Peel the pears, keeping the stem. If they don't stand up, cut their base slightly.

Preparation of the syrup: In a saucepan, mix the wine, sugar, cinnamon, cloves, star anise, vanilla pod and orange zest. Bring to a boil.

Cooking the pears: Place the pears in the saucepan and simmer over low heat for 30 to 50 minutes, or until the pears are tender, turning them regularly so they soak evenly.

Rest and serve: Let the pears cool in the syrup so that they absorb even more of the flavors.
