Suya in Nigeria, especially as a street food. These beef or chicken skewers are marinated in a spice blend of peanuts, chili peppers and ginger, then grilled to perfection. Suya is a naturally gluten-free, spicy and tasty dish, perfect to accompany Jollof rice or to be enjoyed as an aperitif during a barbecue. Traditionally served with raw onions and fresh tomatoes, it captures the essence of Nigerian cuisine.

To prepare the Suya marinade: In a bowl, combine the ground peanuts, paprika, ginger, garlic powder, chili powder and salt. Add the vegetable oil to make a thick paste. If it is too dry, add a little water to moisten it.

Meat marinade: Coat the slices of meat with this spice paste, massaging well so that each piece is covered. Marinate in the refrigerator for at least 1 hour, or overnight for more intense flavors.

Assembling the skewers: Thread the marinated pieces of meat onto the wooden skewers. Preheat your grill (or grill pan) to medium-high heat.

Cooking: Grill the skewers for about 8 to 10 minutes, turning occasionally, until the meat is cooked through and lightly charred around the edges.

Serving: Serve the Suya with slices of raw onion, tomato slices, and a little lemon for drizzle. They are perfect as an aperitif or as a main dish with Jollof rice.
Note
If you prefer a less spicy version, reduce the amount of chili pepper in the marinade. You can also make this recipe with fish for a lighter and just as delicious version.
