  1. Heat the oil in a large saucepan over medium heat.
  2. Add the chicken pieces and brown them on all sides. Remove them from the pan and set aside.
  3. In the same pan, add the onion and garlic, and sauté until golden and fragrant.
  4. Add the diced tomatoes, chili peppers (if using), paprika, salt and pepper. Cook for a few minutes until the tomatoes soften.
  5. Return the chicken to the pan, add the chicken stock and diced pumpkin, then simmer over low heat for about 30 to 40 minutes, until the chicken is tender.

  6. Add the spinach and cook for another 10 minutes.

  7. Serve the muamba de galinha hot, accompanied by funge.
