Heat the oil in a large saucepan over medium heat.

Add the chicken pieces and brown them on all sides. Remove them from the pan and set aside.

In the same pan, add the onion and garlic, and sauté until golden and fragrant.

Add the diced tomatoes, chilies (if using), paprika, salt, and pepper. Cook for a few minutes until the tomatoes soften.

Return the chicken to the pot, add the chicken stock and the diced pumpkin, then simmer over low heat for about 30 to 40 minutes, until the chicken is tender.
