Preparation of the cassava: Peel, then finely grate the cassava. Squeeze the grated cassava to remove excess moisture.

Mix ingredients: In a large bowl, mix the grated cassava with the coconut milk, sugar, eggs, cinnamon, salt and lemon zest, if using. Stir well until you obtain a homogeneous mixture.

Preparing the mold: Preheat your oven to 180°C. Butter a rectangular or round mold, then pour the pudding mixture into it. Make sure the surface is smoothed using a spatula.

Cooking: Bake the pudding for 45 minutes, or until the top is lightly browned and the center is set. To check doneness, insert the tip of a knife into the center of the pudding; it should come out clean.

Cooling and serving: Allow the pudding to cool completely before removing from the mold and serving. This dessert can be enjoyed at room temperature or slightly chilled. You can also sprinkle a little extra cinnamon on top before serving.
