Rich in colors, flavors and symbolism, this salad represents prosperity, luck and harmony. We had the opportunity to participate in these festivities and this meal several times during our stay in Singapore and we have excellent memories of it. In this salad, each ingredient has a special meaning, and the ritual of collective mixing overhead with chopsticks symbolizes the wish for an abundant year for all.

Preparation

1- Prepare the raw vegetables and fish
- Grate or cut all the vegetables into fine julienne strips to obtain a crunchy and even texture. Arrange each ingredient separately on a large round dish for a spectacular visual effect.
- If you use raw fish, make sure it is sashimi quality or use gravlax or smoked salmon. Arrange the slices in the center of the dish.

2- Prepare the sauce
In a bowl, mix all the sauce ingredients until smooth. Taste and adjust sweetness or sourness to your preference. Reserve.

3- Add the toppings
Sprinkle the toasted sesame seeds, peanuts (or cashews) and lime zest over the vegetables and fish.

4- The mixing ritual (Lo Hei)
- Pour the dressing evenly over the salad.
- Invite all guests to bring chopsticks. Together, toss the salad, lifting the ingredients as high as possible, while saying wishes for prosperity and good luck. The higher the salad is tossed, the greater the luck is supposed to be!
