The seasons are reversed in this hemisphere. Christmas in Australia is therefore often a time for barbecues. But glazed ham remains an essential dish of Christmas celebrations in this country. Served cold or warm, it is usually glazed with a sweet-salty mixture that caramelizes in the oven, creating an irresistible shiny golden crust. Traditionally accompanied by tropical fruits, this dish is perfect for festive meals under the Australian sun. Naturally gluten-free, the glazed ham is ideal for large tables and will change the traditional capons or turkeys. When I made this recipe, I couldn't find a whole ham on the bone, so I cooked a pork roast, with the glaze. It's different but everyone asked for more.

  1. Prepare the ham: Preheat your oven to 180°C. Place the ham on a rack over a roasting tray. Carefully remove the rind, leaving a thin layer of fat on the ham. Using a knife, crisscross the surface of the fat, forming diamond shapes.
  2. Prepare the glaze: In a small saucepan, combine the honey (or maple syrup), orange juice, Dijon mustard, brown sugar, vinegar and ground cloves. Heat over low heat, stirring until the brown sugar is dissolved and the mixture is smooth.
  3. Apply the glaze: Generously brush the ham with the glaze using a brush. If you wish, insert whole cloves into the intersections of the diamonds for a decorative and fragrant touch.
  4. Cooking the ham: Place the ham in the oven and cook for approximately 1 hour 30 minutes, brushing every 20 minutes with the glaze to form a nicely caramelized crust. The ham is ready when the surface is golden and shiny. For my part, I cooked the pork in my Ninja foodi: 12 minutes in steam fry, on the grill at the bottom, with the marinade remaining in the bottom, then 10 minutes in Bake at 170°, basting and turning the roast every time. the 3 minutes. 

  5. Finishing and presentation: Remove the ham from the oven and let it rest for 10 minutes before cutting it. Garnish the dish with pineapple slices and candied cherries for a colorful and festive presentation.

Note

Australian glazed ham can be enjoyed both hot and cold. It's delicious with potato salad or grilled vegetables, as well as fresh tropical fruit for a sweet and refreshing contrast.
