  1. Prepare the caramel: Heat the oil in a saucepan over low heat, add the sugar and let it melt until you obtain a golden caramel.
  2. Cook the pork: Add the pork pieces to the caramel and mix to coat them well. Add the garlic, shallot and pepper.
  3. Add the sauce: Pour in the gluten-free tamari sauce and water. Bring to the boil, then reduce the heat and simmer for 45 minutes, until the meat is tender.
  4. Add eggs (optional): Place hard-boiled eggs in the pan to coat with sauce for the last 10 minutes.
  5. Serve: Accompany this generous dish with white rice to fully savor its fragrant sauce.

Note

Add sesame seeds or some fresh herbs like cilantro or chopped green onions when serving.
