Stir-fried shrimp, or “Xiā”, is a popular Chinese New Year dish, symbolizing happiness and joy.
Their quick preparation and their spicy flavors make them a must for Chinese festivals but can also be prepared for any occasion at home. This recipe is naturally gluten-free if you use the appropriate soy sauce.

1- Prepare the shrimp
- If the shrimp are frozen, defrost them first and pat dry with absorbent paper.
- Remove the dorsal vein if necessary.

2- Prepare the sauce
In a small bowl, combine tamari sauce, rice vinegar, honey or brown sugar, and white pepper. Reserve.

3- Cooking shrimp
- Heat the oil in a wok or large skillet over medium-high heat.
- Add the garlic and ginger and sauté until fragrant, about 1 minute.
- Add the shrimp and sauté for 2 to 3 minutes, until they turn pink and opaque.
- Pour the sauce over the shrimp and toss well to coat. Cook for another 1 to 2 minutes so that the sauce reduces slightly.

- Remove the shrimp from the heat and sprinkle them with chopped green onions.
- If desired, add toasted sesame seeds and serve with lemon slices.
