  1. Prepare the vegetables: In a large saucepan, heat the olive oil or butter over medium heat. Add the onion and leek, then fry for a few minutes until soft and lightly browned.
  2. Cooking the potatoes: Add the potato pieces and the bay leaf, then pour in the fish stock. Bring to the boil, then reduce the heat and simmer for about 10 minutes, until the potatoes are almost cooked.
  3. Adding the salmon: Stir the salmon cubes into the soup and cook for 5 to 7 minutes, until the salmon is tender but still juicy.
  4. Cream the soup: Add the crème fraîche and season with salt and pepper to taste. Mix gently and heat over low heat for 2 to 3 minutes.
  5. Finishing: Remove the bay leaf and add chopped fresh dill before serving for a touch of freshness.
