Preparing the dough

Mix all the ingredients in a food processor or by hand until a ball forms.

Roll out the dough thinly, cut circles of dough slightly larger than the tartlet molds, line the molds with circles of dough.

Cook for 10/12 minutes in an oven preheated to 180 degrees.

Wash and cut the figs into slices -
In a bowl, mix the ricotta with 3 olives, honey, basil, salt, pepper and Espelette pepper. Check if the ricotta cream is to your liking and adjust if necessary.
