Preparing the dough

  1. Mix all the ingredients in a food processor or by hand until a ball forms.
  2. Roll out the dough thinly, cut circles of dough slightly larger than the tartlet molds, line the molds with circles of dough.
  3. Cook for 10/12 minutes in an oven preheated to 180 degrees.
  4. Preparing the tartlet
    Wash and cut the figs into slices
  5. In a bowl, mix the ricotta with 3 olives, honey, basil, salt, pepper and Espelette pepper. Check if the ricotta cream is to your liking and adjust if necessary.
  6. Garnish the tart shells with the ricotta cream
  7. Add the fig slices, the ham, an olive and a few basil leaves or sprouted seeds for decoration.
