Preparation of the dough: In a bowl, mix the chickpea flour, rice flour, turmeric, sugar and salt. Gradually add the water to form a smooth paste. Stir in the lemon juice and baking soda just before cooking.

Steaming: Pour the batter into a greased mold and steam for 15 to 20 minutes. Check the cooking with a toothpick which should come out clean. Let cool and cut into squares.

Seasoning: Heat oil in a pan, add mustard seeds, green chilli and curry leaves. Pour this mixture over the dhokla pieces before serving.
