Chicken satay skewers are a street food staple in Southeast Asia, particularly Indonesia, Malaysia and Thailand. These are tender pieces of chicken marinated and grilled on skewers, accompanied by a delicious peanut sauce. This gluten-free version respects authentic flavors. This is always what my youngest asked for when we lived in Singapore and sometimes had lunch on weekends in a Food Court. It's an easy recipe to prepare and ideal for a convivial meal.

  1. 1- Prepare the marinade

    In a bowl, combine the garlic, tamari sauce, sesame oil, lime juice, turmeric, cumin, chili pepper, salt and pepper. Add the chicken pieces and mix well to coat. Cover and marinate in the refrigerator for at least 1 hour (or ideally several hours).

  1. 2- Prepare the peanut sauce

    In a small saucepan, combine all the sauce ingredients. Heat over low heat, stirring until smooth and creamy. Adjust the seasoning to suit your taste. Reserve.

  1. 3- Thread the skewers and grill them
    • Thread the chicken pieces onto the wooden skewers.
    • Preheat a grill or grill pan to medium heat. Cook the skewers for about 8 to 10 minutes, turning them regularly so that they are golden and cooked through. You can also cook them on the oven rack at 200°C (390°F) for 10 to 15 minutes.
  1. 4- Serve

    Arrange the chicken satay skewers on a plate and serve them with the peanut sauce. Add cucumber slices, lime wedges, white rice or a fresh salad as an accompaniment.
