Ingredients

Preparation

  1. Prepare the chicken: Preheat your oven to 200°C.
  2. In a small bowl, combine the lemon juice, olive oil, seven-spice blend, salt, and pepper. Generously coat the chicken pieces with this marinade. Let it sit for at least 30 minutes to allow the flavors to penetrate.
  3. Place the chicken pieces in an ovenproof dish. Cover with aluminum foil and bake for 35 minutes. Remove the foil and let it brown for another 10 to 15 minutes.
  4. Prepare the rice: Rinse the basmati rice under cold water until the water runs clear. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté until translucent.

  5. Add the 7 Lebanese spices and stir for one minute to release the aromas.
  6. Add the rice to the saucepan and stir to coat each grain with the spices. Then add the chicken stock. Bring to a boil, then reduce the heat and cover. Simmer until the rice has absorbed all the stock (about 12-15 minutes).
  7. To assemble and serve: Arrange the fragrant rice on a serving platter. Top with the browned chicken pieces. Garnish with toasted almonds and a few sprigs of fresh parsley. Serve hot and enjoy this Lebanese specialty.
