Preserving fresh herbs and lemon

Fresh herbs and lemon are staples of global cuisine, bringing flavors to many dishes, especially in gluten-free recipes. However, they can lose their freshness quickly if stored improperly. Here are some simple and effective tips to extend their lifespan and reduce waste, while maintaining their optimal taste for your culinary creations.

How to store fresh herbs?

  1. Herbs in a vase of water: Herbs like parsley, cilantro or basil can be stored like flowers! Cut the ends of the stems and place them in a glass of water, changing the water every couple of days. Cover the leaves with a plastic bag and store in the refrigerator for prolonged freshness.
  2. Wrap in damp paper: For other herbs such as thyme, rosemary or mint, wrap them in a slightly damp cloth or paper towel. This will help retain moisture without making them soggy. Then place the herbs in an airtight bag or glass container before storing them in the refrigerator.
  3. Freezing Herbs: If you have a large quantity of fresh herbs, freezing is an ideal option. To do this, chop the herbs and place them in an ice cube tray. Cover them with olive oil or water before freezing. You will be able to use portions of herbs throughout the year, by adding them directly to your dishes while cooking. You can also wash them, dry them and place them in a freezer bag in the freezer.
  4. Dry herbs: You can also dry certain herbs like rosemary, thyme or oregano. Use your dehydrator or hang them upside down in a dry, well-ventilated area for one to two weeks, then store them in airtight jars for later use.

How to store lemon?

  1. Store the lemon whole: If you don't need to cut your lemon right away, leave it at room temperature for a few days. For longer storage, put it in the refrigerator in the vegetable drawer. It can stay fresh for up to 2 to 3 weeks.
  2. Storing lemon halves: Once cut, lemon tends to dry out quickly. To avoid this, place the lemon half, cut side down, on a small plate or wrap it in plastic wrap before refrigerating it. This helps preserve its juice and flavor for a few days.
  3. Freeze the juice and zest: To avoid wasting anything, remember to freeze the lemon juice and zest. Squeeze the lemons and pour the juice into an ice cube tray. As for the zest, simply grate it and freeze it in airtight bags. These portions will be perfect for adding a touch of acidity and freshness to your dishes at any time.
  4. Freezing kaffir lime: I buy them in 2 or 3 packs and put them directly in my freezer. As I only use the zest and a little at a time, a little grating or peeling, and I put it back in the freezer.

Conclusion

Whether you want to preserve your fresh herbs for salads or marinades or preserve your lemons to enhance your dishes, these simple tips will help you enjoy their flavor longer. By optimizing the conservation of these essential ingredients, you will also reduce food waste, while making it easier to prepare your daily recipes.
