Ingredients
  • 2 large eggplants
  • 3 ripe tomatoes
  • 3 cloves of garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 3 tablespoons of olive oil
  • 1 Juice of half a lemon
  • Salt and pepper
  • Chopped fresh coriander for garnish

    Grill the whole eggplants over a fire or in the oven until the skin is blackened and the flesh is tender. Then peel them and chop the flesh.

    Peel and seed the tomatoes, then dice them. In a pan, heat the olive oil, add the minced garlic and sauté for a few minutes. Then add the tomatoes and simmer until they have reduced significantly.
