Yassa Chicken (Senegal)

Description

Ingredients

1 whole chicken cut into pieces (or chicken thighs)
4 onions
4 lemons (for the juice)
2 cloves of garlic
1 chili pepper (optional)
2 tbsp mustard
4 tbsp oil (peanut preferably)
1 stock cube (optional)
Salt and pepper to taste

Marinade:

In a large bowl, squeeze the lemons to collect the juice.

Add the mustard, crushed garlic, crumbled stock cube (if using), salt, pepper and chilli. Mix.

Add the chicken pieces to the marinade. Toss to coat the chicken and marinate for at least 2 hours (ideally overnight) in the refrigerator.

Cooking the chicken:

Remove the chicken pieces from the marinade and brown them in a large frying pan with a little oil until nicely browned.

Reserve the chicken and add the sliced onions to the same pan. Sauté until translucent.

Final cooking:

Return the browned chicken to the pan with the onions. Pour the marinade into the pan, adding a little water if necessary to obtain a sauce. Simmer over low heat for about 30 to 40 minutes, until the chicken is cooked through and the flavors have blended.
