8 peeled raw shrimp
2tbsp finely chopped chives
1Tbsp fish sauce
1/4tsp ground black pepper
1tbsp vegetable oil (or coconut oil for more flavor)

Shell and devein the shrimp if you haven't already done so. Cut them into small pieces.

In a large bowl, crack the eggs and beat them. Add the chopped shrimp, chives, fish sauce, and black pepper. Mix everything well so that the ingredients are well distributed.

Heat the oil in a non-stick pan over medium heat. Once the oil is hot, pour the egg and shrimp mixture into the pan.

Cook for 2 to 3 minutes until the bottom is nicely browned, then flip the omelette (or fold if that's easier). Cook for another 1 to 2 minutes on the other side.
