Ingredients
  • 4 leeks
  • 2 cloves of garlic
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1 lemon juice
  • 3 tbsp olive oil
  • 200 g cooked chickpeas (optional)
  • Salt, pepper
Preparation
  1. Prepare the leeks: wash them carefully, then cut them into thin rings.
  2. Brown: in a pan, heat the olive oil and sauté the chopped garlic until it is slightly golden.
  3. Add the spices: add the cumin, turmeric and mix for a few seconds to release the aromas.
  4. Cooking the leeks: Incorporate the leeks, 2 tablespoons of water, salt, pepper, and sauté over low/medium heat for 10 minutes, covered, stirring regularly.
  5. Add lemon and chickpeas: Add the lemon juice and chickpeas if you use them. Mix well.
  6. Simmer: cover and cook for another 5 minutes until the leeks are tender.
