Ingredients
500gof chicken pieces
400ml coconut milk
2tablespoons of gluten-free green curry paste
1 green bell pepper cut into strips
1 diced eggplant
1tbsp gluten-free fish sauce
1tsp of sugar
Thai basil leaves for garnish

Heat a tablespoon of oil in a large pan over medium heat. Add the green curry paste and cook for 2-3 minutes until fragrant.

Add the chicken and fry it until lightly browned.

Stir in the remaining coconut milk, the bell pepper and the eggplant. Simmer for 20 minutes.

Season with fish sauce and palm sugar. Let it simmer for another 5 minutes.
