The Fafa chicken is a traditional Tahitian dish, which consists of chicken pieces simmered in coconut milk and accompanied by Fafa leaves , a variety of local spinach that can be replaced by the spinach from our home. This recipe, naturally gluten -free , brings a creamy texture typical of Polynesian cuisine . Easy and quick to prepare, it can be enjoyed with white rice or Uru (bread fruit) if you really want an authentic meal. Enough to transport us, for a meal, to the Pacific Islands.
Heat the oil in a large skillet or wok and brown the onion and garlic until golden.
Add the chicken pieces and brown on all sides.
Pour the coconut milk and simmer over low heat for 15 minutes.
Add the spinach and continue cooking for 5 minutes, until tender.
Season with salt and pepper, then serve hot with rice or Uru.
