Tahitian fafa chicken

The Fafa chicken is a traditional Tahitian dish, which consists of chicken pieces simmered in coconut milk and accompanied by Fafa leaves , a variety of local spinach that can be replaced by the spinach from our home. This recipe, naturally gluten -free , brings a creamy texture typical of Polynesian cuisine . Easy and quick to prepare, it can be enjoyed with white rice or Uru (bread fruit) if you really want an authentic meal. Enough to transport us, for a meal, to the Pacific Islands.

Ingredients
  • 500 g chicken breasts cut in large pieces
  • 300 g of fresh or frozen spinach (or FAFA leaves)
  • 1 can of coconut milk (400 ml)
  • 1 chopped onion
  • 2 cloves of garlic, chopped
  • 2 tbsp coconut or olive oil
  • Salt and pepper to taste
Preparation
  1. Heat the oil in a large skillet or wok and brown the onion and garlic until golden.

  2. Add the chicken pieces and brown on all sides.

  3. Pour the coconut milk and simmer over low heat for 15 minutes.

  4. Add the spinach and continue cooking for 5 minutes, until tender.

  5. Season with salt and pepper, then serve hot with rice or Uru.
