The Sõrnikud (or Syrniki in Russian) are small pancakes based on very popular fresh cheese in Estonia and in the Eastern countries. Made with kohupiim (can be replaced by ricotta or cheese cottage), they are slightly sweet and often served with crème fraîche, jam or fresh fruit.
Prepare the dough: In a large bowl, mix together the Kohupiim, egg, sugar, vanilla extract and a pinch of salt. Incorporate the rice flour little by little until you obtain a slightly thick paste. Add caraway seeds if desired.
Fruit : Add raisins or apple pieces to the batter for added texture and flavor.
Sugar-free : You can also make a savory version of Sõrnikud by omitting the sugar and adding herbs like chives or parsley.
