Ingredients

4 John Dory fillets
1 dose of saffron
200 ml of crème fraîche or lactose-free vegetable cream
1 shallot, finely chopped
1 Tbsp butter or olive oil
Salt, pepper
For the frozen vegetables:
2 carrots, cut into sticks
1 turnip, diced
100 g of peas
1 Tbsp butter or olive oil
1 Tbsp of sugar
Salt, pepper

Preparation

Prepare the saffron sauce: Brown the shallot in butter or olive oil until translucent. Add the cream and saffron, simmer over low heat until thickened. Season with salt and pepper.

Prepare the glazed vegetables: Melt the butter with the sugar in a pan, add the vegetables and a little water. Cover and cook until soft and glossy.

Cook the John Dory: In a pan, cook the John Dory fillets for 2-3 minutes on each side, until they are golden brown.

Serve: Arrange the John Dory on a bed of glazed vegetables, topped with saffron sauce.
