The Rødgrød Med Fløde is one of the best known desserts in Denmark. Its name, which can be difficult to pronounce for non-Danois, literally means "red compote with cream". This dessert is traditionally composed of red fruits and served with a touch of crème fraîche to balance the acidity of the fruits. Light and refreshing, the Rødgrød Med Fløde is often tasted during hot summer days, but can also be appreciated throughout the year.

Ingredients
  • 500 g red fruits (fresh or frozen)
  • 150g powdered sugar
  • 1 Tbsp lemon juice
  • 500 ml of water
  • 2 tbsp potato (or corn)
  • 200 ml liquid cream (or lactose-free, depending on your preferences)

    Prepare the red fruits: In a large saucepan, pour the red fruits, sugar and water. Bring to a boil over medium heat, stirring occasionally, until the fruit begins to break down and release its juices. Then add the lemon juice to bring a touch of acidity which enhances the taste of the fruits.

    Thicken the compote: In a small bowl, mix the potato starch with a little cold water to make a smooth paste. Gradually add this mixture to the red fruit compote, stirring constantly. Leave to simmer over low heat for about 5 minutes, until the compote thickens slightly.

    Let cool: Once the compote has thickened, remove it from the heat and let it cool to room temperature. Then transfer the compote to individual bowls or a large serving dish. Place it in the refrigerator for at least an hour to firm up and cool completely.

    Serve with cream: Just before serving, pour a drizzle of liquid cream over the cooled compote. You can also use light whipped cream for a more indulgent version.
