Cassava cake (Reunion Island)

This cassava cake with melting texture and coconut taste is a typical meeting of Reunion and often prepared for special occasions. It is a wonderful memory of my childhood, when we go hiking in the circuses. We slept in cottages and the classic meal (Rougail) was followed by small sweets: cassava cake or potato cake (soft)

Description

Ingredients

350 g cassava root
150 g grated coconut
160 g of sugar
100 g melted butter (or coconut oil for a lactose-free version)
2 eggs
vanilla extract or the seeds of a vanilla stick

Cassava: peel the cassava and grate it.

Add: grated coconut, sugar and mix

Put the dough in a buttered or silicone mold and bake in an oven preheated to 180 degrees; bake for 50 to 60 minutes until the top is golden brown and the knife blade comes out clean from the cake.
