Cassava cake (Reunion Island)

This cassava cake, with its melt-in-your-mouth texture and coconut flavor, is a typical Réunion Island dessert, often prepared for special occasions. It's a wonderful childhood memory, from when we went hiking in the cirques. We stayed in guesthouses, and the traditional meal (rougail) was followed by little treats: cassava cake or sweet potato cake

Ingredients
  • 350 g of cassava root
  • 150g of grated coconut
  • 160 g of sugar
  • 100g of melted butter (or coconut oil for a lactose-free version )
  • 2 eggs
  • vanilla extract or the seeds from a vanilla bean
Preparation

    Cassava: peel the cassava and grate it.

    Add the grated coconut and sugar, and mix

    Add the melted butter and beaten eggs

    Then add the vanilla

    Cooking:

    Place the batter in a greased or silicone mold and bake in a preheated oven at 180 degrees; bake for 50 to 60 minutes until the top is golden brown and a knife inserted into the center comes out clean.
