Palm heart salad , or salad of hearts of palm, is a refreshing Brazilian appetizer that is naturally gluten-free . With its crisp, fresh texture, it's often served at summer meals and churrascos (Brazilian barbecues). Originating from Amazonian cuisine, the heart of palm is a prized ingredient from the juçara or açaí palm tree. Here, it's paired with ripe tomatoes, red onions, and a tangy lime vinaigrette—a typical Brazilian touch. Quick and easy to prepare, this colorful and exotic salad is perfect for adding a touch of flair to your summer meals.
Drain and rinse the hearts of palm, then cut them into rounds.
In a salad bowl, mix the diced tomatoes, sliced onion, avocado and hearts of palm.
To prepare the vinaigrette: emulsify the lime juice with the olive oil, salt, and pepper. (I use my immersion blender)
Pour the dressing over the salad and mix well.
Sprinkle with fresh parsley and serve chilled.
