Palmito salada , or palm heart salad, is a refreshing Brazilian entrance and naturally gluten -free . With its crunchy and fresh side, it is often served during summer meals and churrascos (Brazilian barbecues). Originally from Amazonian cuisine, the palm heart is a precious ingredient from the palm, will have jacked or açaí. It is accompanied here with very ripe tomatoes, red onions and a tangy lime, a typical Brazil touch. Easy and quick to prepare, this exotic and colorful salad will be perfect for entinguate your summer meals.
Drain and rinse the palm hearts, then cut them into rings.
In a bowl, mix the diced tomatoes, the minced onion, the avocado and the palm hearts.
Prepare the vinaigrette: emulsify the lime juice with olive oil, salt and pepper. (I use my hand blender)
Pour the vinaigrette over the salad and mix well.
Sprinkle with fresh parsley and serve fresh.
