Ingredients
  • 1 kg of pumpkin (or pumpkin)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 500 ml gluten-free vegetable stock
  • 200 ml coconut cream (or cream)
  • 1/2 tsp ground cumin
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
Preparation
  1. Prepare the base: In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft. Add the diced pumpkin, cumin and cinnamon, then sauté for a few minutes to coat the spices.
  2. Cooking: Pour the broth into the saucepan and bring to the boil. Reduce the heat, cover and simmer for about 20 minutes, or until the pumpkin is tender.
  3. Blending and finishing: Blend the soup using a hand blender until smooth. Add the coconut cream, mix well, then season with salt and pepper to taste. Serve hot, garnished with toasted pumpkin seeds.
