Fittata with mushrooms is a classic of Italian cuisine, but the porcini mushrooms are back this fall, I chose to cook them in this way. Frittata is a versatile dish and naturally gluten -free and highlights the porcini mushrooms. Ideal for a quick meal, Frittata, with its wooded aromas and melting texture, lends itself to a brunch as well as a light dinner.
For more flavor, you can add a little fresh thyme or rosemary when cooking the porcini mushrooms. The frittata is even better the next day, served cold or reheated.
