Wine-poached pears are a very elegant, fresh and delicious dessert, ideal for St. Nicholas Day or Christmas celebrations. Naturally gluten-free, it combines the sweetness of pears with the richness of spices and red wine. Easy and quick to make, this dessert is perfect to end a festive meal on a light and fragrant note.

Ingredients
  • 4 firm pears (Conference or Williams type)
  • 500 ml of red wine
  • 100 g of sugar
  • 1 stick of cinnamon
  • 2 cloves
  • 1 star anise
  • 1 vanilla pod
  • The zest of an orange
Preparation
  1. Preparation of the pears: Peel the pears, keeping the stem. If they don't stand up, cut their base slightly.
  2. Preparation of the syrup: In a saucepan, mix the wine, sugar, cinnamon, cloves, star anise, vanilla pod and orange zest. Bring to a boil.
  3. Cooking the pears: Place the pears in the saucepan and simmer over low heat for 30 to 50 minutes, or until the pears are tender, turning them regularly so they soak evenly.

  4. Rest and serve: Let the pears cool in the syrup so that they absorb even more of the flavors.
  5. Serve the pears topped with their reduced syrup, accompanied by a scoop of ice cream or a little whipped cream.
