  • 4 John Dory fillets
  • 1 dose of saffron
  • 200 ml of fresh cream or lactose-free plant-based cream
  • 1 finely chopped shallot
  • 1 tbsp of butter or olive oil
  • Salt, pepper
  • For glazed vegetables:
  • 2 carrots, cut into sticks
  • 1 turnip, diced
  • 100g of peas
  • 1 tbsp of butter or olive oil
  • 1 tablespoon of sugar
  • Salt, pepper

    To prepare the saffron sauce: Sauté the shallot in butter or olive oil until translucent. Add the cream and saffron, and simmer over low heat until thickened. Season with salt and pepper.
