Sweet potato noodles, called japchae in Korea, are transparent and I generally find them in Asian grocery store. This dish of sautéed noodles with various vegetables is generally served as an accompaniment, hot or cold. What makes these noodles unique is their slightly elastic texture and their ability to absorb flavors. It is a dish that I often make because it is easy to adapt: it can be prepared with or without meat to adapt to all diets.
