Jack-o'-Lantern Gluten-Free Stuffed Peppers

Jack-o'-Lantern Stuffed Peppers are a creative and fun way to celebrate Halloween while enjoying a healthy, gluten-free main dish. These peppers are carved to look like Halloween lanterns, then stuffed with a mixture of rice and spicy meat or vegetables. They bring both flavor and decoration to your Halloween table.

Ingredients
  • 4 large orange peppers
  • 200 g basmati rice (or other rice)
  • 200g ground beef
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 400 g crushed tomatoes
  • Salt and pepper to taste
  • 1 tbsp olive oil
Preparation
  1. Prep the peppers: Cut the tops of the peppers to create “caps,” then remove the seeds and membranes. Use a knife to cut out Jack-o'-Lantern faces on each pepper, carving eyes, a nose and a mouth.
  2. Preparation of the stuffing: In a frying pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft. Add the ground beef, cumin and paprika, then cook until the meat is browned. Add the crushed tomatoes, then simmer for 10 minutes. Mix the cooked rice into the mixture and season with salt and pepper.
  3. Stuffing and cooking: Fill each pepper with the stuffing, then place them in a baking dish. Place the “hats” back on the peppers and bake at 180°C for around 20 to 25 minutes, until the peppers are tender.
  4. Serving: Serve the Jack-o'-Lantern stuffed peppers hot, decorated on the Halloween table for a festive and delicious effect.
