4 large orange bell peppers

Preparing the peppers: Cut the tops off the peppers to create "lids," then remove the seeds and membranes. Use a knife to carve Jack-o'-Lantern faces onto each pepper, sculpting eyes, a nose, and a mouth.

To prepare the filling: In a pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened. Add the ground beef, cumin, and paprika, and cook until the meat is browned. Stir in the chopped tomatoes, then simmer for 10 minutes. Mix the cooked rice into the mixture and season with salt and pepper.

Stuffing and cooking: Fill each pepper with the stuffing, then place them in an ovenproof dish. Replace the "lids" on the peppers and bake at 180°C for about 20 to 25 minutes, until the peppers are tender.
