For Candlemas , we all enjoy pancakes, but when following a gluten-free diet, it can be difficult to rediscover the light texture and characteristic taste of the pancake. Fortunately, this gluten-free pancake recipe remains simple and delicious. My children couldn't help but devoured them for a snack. Ideally garnished with jam, spread, melted chocolate or simply a little sugar, they adapt to all your desires. This easy and quick version is perfect for making golden pancakes to share with family or friends. Let yourself be tempted and celebrate Candlemas with this unmissable recipe that everyone agrees on!
In a salad bowl, mix the rice flour, cornstarch and salt.
Add the eggs and oil and whisk gently until you have a thick batter.
Gradually pour in the milk while mixing with a whisk to avoid lumps. You will obtain a slightly thick fluid paste.
Stir in the rum (if using), then let the dough rest for at least 30 minutes at room temperature.
Heat a lightly oiled or buttered non-stick pan over medium heat. Pour a 3/4 ladle of batter into the hot pan, tilt your pan several times to distribute the batter and cook for 1 minute on each side.
Garnish your pancakes as you wish: sugar, jam, spread!
