In a bowl, mix the rice flour, cornstarch and salt.
Add the eggs and oil and whisk gently until you get a thick batter.
Gradually pour in the milk while whisking to avoid lumps. You will obtain a smooth, slightly thick batter.

Stir in the rum (if used), then let the dough rest for at least 30 minutes at room temperature.
