Ingredients
  • 1 pork tenderloin (around 500g)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the barbecue sauce:
  • 150 ml of ketchup (generally gluten-free but check)
  • 2 Tbsp of cider vinegar
  • 2 Tbsp brown sugar
  • 1 Tbsp of honey
  • 1 tbsp mustard (usually gluten-free but check)
  • 1 tbsp tamari sauce (or gluten-free soy sauce)
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 pinch of cayenne pepper (optional, depending on your taste for heat)

    Prepare the barbecue sauce:

    In a small saucepan, combine all the barbecue sauce ingredients: ketchup, cider vinegar, brown sugar, honey, mustard, soy sauce, smoked paprika, onion powder, garlic powder, and cayenne pepper.

    Bring to a boil over medium heat while stirring regularly. Once the sauce begins to boil, reduce the heat and simmer for 10-15 minutes until it thickens slightly. Stir occasionally.

    Taste and adjust seasonings to your preference (add more sugar for a sweeter taste or more vinegar for a more sour flavor).

    Prepare the filet mignon:
