Fesenjan (Iran)

Fesenjan is a traditional Persian stew, often prepared with chicken or duck, walnuts, and pomegranate juice for a thick, sweet and tangy sauce.

Ingredients
  • 4 pieces of chicken
  • 150g of ground walnuts
  • 150 ml of pomegranate juice
  • 1 finely chopped onion
  • 1 tablespoon of sugar
  • Salt and pepper

    Brown the chicken pieces in a pan with oil.

    In a saucepan, fry the onion until translucent, then add the ground walnuts and toast them lightly.

    Add the pomegranate juice and a little water, then simmer for 20 minutes until thickened.

    Add the chicken to the sauce, cover, and simmer over low heat for 45 minutes. Adjust the salt, pepper, and sugar to taste.
