Ingredients

500g of red berries (fresh or frozen)
150g powdered sugar
1 Tbsp lemon juice
500 ml of water
2 tablespoons of potato starch (or corn starch)
200 ml of liquid cream (or lactose-free, according to your preference)

To prepare the berries: In a large saucepan, combine the berries, sugar, and water. Bring to a boil over medium heat, stirring occasionally, until the berries begin to break down and release their juices. Then add the lemon juice for a touch of acidity that enhances the berry flavor.

To thicken the compote: In a small bowl, mix the potato starch with a little cold water to form a smooth paste. Gradually stir this mixture into the berry compote, stirring constantly. Simmer over low heat for about 5 minutes, until the compote thickens slightly.

Let it cool: Once the compote has thickened, remove it from the heat and let it cool to room temperature. Then transfer the compote to individual bowls or a large serving dish. Place it in the refrigerator for at least an hour to firm up and chill completely.

Serve with cream: Just before serving, drizzle a little heavy cream over the cooled compote. You can also use lightly whipped cream for a more indulgent version.
