Gluten-free carrot and ham roll

Like the savory zucchini roll , I made one with carrots and ham. It was just as easy and delicious as a starter or appetizer.

Ingredients
  • 6 carrots
  • 3 eggs (whites and yolks separated)
  • 50 g rice flour (or 30 g rice and 20 g chickpeas)
  • 100 g of fresh cheese (goat or spreadable cheese)
  • 150g thinly sliced ​​ham (optional, but useful if your cheese is a little dry )
  • 2 tbsp crème fraîche
  • 1 tbsp olive oil
  • Salt, pepper

    Preheat the oven to 180°C.

    Grate the carrots or blend them in a food processor. Cook them in a pan with a little olive oil for about fifteen minutes.

    In a bowl, whisk the egg yolks with the flours, carrots, oil, salt and pepper.

    Beat the egg whites until stiff. Gently fold them into the mixture.

    Spread the mixture on a baking sheet covered with baking paper (I usually use a greasy spray to make sure the sponge comes off easily).

    Bake for 20 minutes, the sponge cake should remain soft and golden.

    Turn the sponge cake out onto a cloth. Let it cool. Mix the cheese with the cream if necessary and spread it evenly.

    Add the ham slices.

    Roll up with the cloth, then place the roll in cling film and close it tightly. Refrigerate for 1 hour.

    Cut into slices and serve chilled.
