The seasons are reversed in this hemisphere. Christmas in Australia is therefore often a time for barbecues. But glazed ham remains a Christmas staple in this country. Served cold or warm, it's usually glazed with a sweet and savory mixture that caramelizes in the oven, creating an irresistible golden and shiny crust. Traditionally accompanied by tropical fruit, this dish is perfect for festive meals under the Australian sun. Naturally gluten-free, glazed ham is ideal for large gatherings and makes a nice change from traditional capons or turkeys. When I made this recipe, I couldn't find a whole bone-in ham, so I cooked a pork roast, including the glaze. It's different, but everyone asked for seconds.
Cooking the ham: Place the ham in the oven and cook for approximately 1 hour and 30 minutes, basting every 20 minutes with the glaze to form a well-caramelized crust. The ham is ready when the surface is golden brown and shiny. I cooked the pork in my Ninja Foodi: 12 minutes in the steam fry function, on the bottom rack, with the remaining marinade in the bottom, then 10 minutes in the bake function at 170°C (340°F), basting and turning the roast every 3 minutes.
Australian glazed ham can be enjoyed both hot and cold. It is delicious served with potato salad or grilled vegetables, as well as fresh tropical fruit for a sweet and refreshing contrast.
